Jump to RecipeAchari chicken is a Pakistani curry named for its achari, or pickle-like, flavor. Chicken is cooked in a richly spiced tomato and yogurt gravy scented with fennel, nigella, mustard, cumin and fenugreek. The finished curry is glossy with separated oil and is commonly served with naan or rice.
This version uses bone-in chicken for a fuller sauce and a traditional pickling-spice profile. Add the yogurt gradually over low heat so it stays smooth, and finish with ginger, sliced green chile and cilantro to match the fresh garnish shown.
Ingredients
- 2 lb (900 g) bone-in, skinless chicken thighs and drumsticks, cut into serving pieces
- 1/2 cup (120 g) plain whole-milk yogurt
- 1 tbsp (15 ml) lemon juice
- 1 tsp (6 g) kosher salt, divided
- 1/2 tsp ground turmeric
- 2 tbsp (30 ml) neutral oil
- 1 tsp cumin seeds
- 1 tsp fennel seeds
- 1 tsp brown mustard seeds
- 1/2 tsp nigella seeds (kalonji)
- 1/2 tsp fenugreek seeds
- 1 medium yellow onion, finely chopped
- 1 tbsp (15 g) finely grated fresh ginger
- 5 garlic cloves, finely grated
- 2 medium tomatoes, finely chopped
- 1 tsp ground coriander
- 1 tsp Kashmiri chile powder or mild paprika
- 1/2 tsp cayenne pepper
- 1/2 cup (120 ml) water
- 1/2 tsp garam masala
- 1 tbsp (15 ml) white vinegar or lemon juice
- 1/4 cup (15 g) chopped fresh cilantro, plus more to garnish
- 1-inch (2.5 cm) piece fresh ginger, cut into fine matchsticks, for garnish
- 1 fresh green chile, thinly sliced, for garnish
Instructions
- 1
Combine the chicken, yogurt, lemon juice, 1/2 teaspoon salt and turmeric in a bowl. Cover and marinate in the refrigerator for 30 minutes; let it stand at room temperature for 10 minutes before cooking.
- 2
Heat the oil in a heavy, wide pot over medium heat until shimmering. Add the cumin, fennel, mustard, nigella and fenugreek seeds and cook for 30 seconds, until the mustard seeds begin to pop and the spices smell fragrant.
- 3
Add the onion and remaining 1/2 teaspoon salt. Cook over medium heat for 8-10 minutes, stirring often, until softened and lightly golden.
- 4
Stir in the grated ginger and garlic. Cook over medium heat for 1-2 minutes, until raw garlic smell disappears but the mixture is not browned.
- 5
Add the tomatoes, coriander, Kashmiri chile powder and cayenne. Cook over medium heat for 8-10 minutes, stirring and pressing the tomatoes, until thick, glossy and the oil separates at the edges.
- 6
Reduce the heat to low. Add the marinated chicken and any marinade, stirring to coat, then cook for 5 minutes until the chicken turns opaque and the yogurt is incorporated without curdling.
- 7
Pour in the water and bring to a gentle simmer over medium heat. Cover and cook on low for 20-25 minutes, turning the chicken once, until it is tender and reaches 165°F (74°C) at the thickest part.
- 8
Uncover and simmer over medium-low heat for 3-5 minutes, until the gravy is thick and reddish-orange and a layer of oil shows on top. Stir in the garam masala, vinegar or lemon juice and chopped cilantro.
- 9
Rest the curry off the heat for 5 minutes. Garnish with ginger matchsticks, sliced green chile and extra cilantro, and serve hot with naan or basmati rice.
Tips for the Best Achari Chicken
- Use plain full-fat yogurt and add it with the heat low; cold or low-fat yogurt is more likely to split.
- Fenugreek seeds are bitter if over-toasted, so cook them only with the other whole spices until fragrant.
- For a smoother restaurant-style gravy, blend the cooked tomato mixture before adding the chicken, then return it to the pot.
- Bone-in chicken gives the sauce more flavor, but boneless thighs work; reduce the final cooking time to about 12-15 minutes.
- Adjust the vinegar or lemon juice at the end. Achari chicken should taste tangy, but the acidity varies between tomatoes and yogurt.
- The curry can be made one day ahead and refrigerated; its pickled flavor becomes more pronounced overnight.
Storage and Reheating
Refrigerate cooled chicken in an airtight container for up to 3 days. Freeze for up to 2 months, preferably without the fresh garnishes. Thaw overnight in the refrigerator and reheat gently in a covered saucepan with a splash of water until steaming hot.
Frequently Asked Questions
What does achari mean in chicken curry?
Achari means pickle-style. The curry gets its characteristic tang and aroma from whole spices commonly used in South Asian pickles, including mustard, fennel, nigella and fenugreek.
Can I make achari chicken with boneless chicken?
Yes. Use boneless, skinless chicken thighs and simmer them for about 12-15 minutes after adding the water, until they reach 165°F (74°C).
Is achari chicken very spicy?
It is usually moderately spicy and tangy. Reduce or omit the cayenne and use a mild green chile for a gentler curry without losing the pickling flavor.
What should I serve with achari chicken?
Naan, roti or basmati rice are traditional choices. Sliced red onion, lemon wedges and a cooling yogurt raita also work well alongside it.
