Chana Chaat
A Pakistani-style chickpea chaat with potato, tamarind, fresh herbs, chaat masala and crisp toppings—bright, tangy street food for lunch or snacks.
By TastyTrails Kitchen · Published · Updated
Jump to RecipeChana chaat is a popular South Asian street-food salad made with tender chickpeas, potato, chutneys, herbs and warming spices. This version follows the Pakistani street-style plate: saucy chickpeas and potatoes topped with diced tomato, red onion, green chili, cilantro and a generous handful of crisp fried onions or sev.
The key is balancing tangy tamarind, fresh lemon and chaat masala without making the mixture watery. Assemble it just before serving so the chickpeas absorb the chutney while the crunchy topping stays crisp. Serve in a shallow bowl or plate with a spoon, as sold at many roadside chaat stalls.
Ingredients
- 2 medium russet potatoes, peeled and cut into 1/2-inch (1.25 cm) cubes
- 2 tbsp (30 ml) neutral oil
- 1 tsp (2 g) cumin seeds
- 1/2 tsp (1 g) crushed red pepper flakes
- 1/2 tsp (1 g) ground turmeric
- 1/2 tsp (1 g) ground coriander
- 1/2 tsp (1 g) ground cumin
- 1/2 tsp (1 g) ground black pepper
- 1/2 tsp (3 g) fine salt, plus more to taste
- 2 cans (15 oz/425 g each) chickpeas, drained and rinsed
- 1/3 cup (80 ml) water
- 1/4 cup (60 ml) tamarind chutney
- 2 tbsp (30 ml) green chutney
- 2 tbsp (30 ml) fresh lemon juice
- 1 medium tomato, finely diced
- 1/2 medium red onion, finely diced
- 1 small green chili, thinly sliced
- 1/2 cup (15 g) chopped fresh cilantro
- 1/2 cup (25 g) crisp fried onions or sev (crunchy chickpea noodles)
- 1 tsp (2 g) chaat masala, for finishing
- 1/4 tsp (1 g) Kashmiri chili powder, optional, for finishing
Instructions
- 1
Place the diced potatoes in a saucepan, cover with cold water and bring to a boil over medium-high heat. Cook until just tender when pierced, 8-10 minutes; drain well.
- 2
Heat the oil in a large skillet over medium heat. Add the cumin seeds and cook until fragrant and lightly sizzling, about 30 seconds.
- 3
Add the red pepper flakes, turmeric, ground coriander, ground cumin, black pepper and salt. Stir over medium heat for 20 seconds, until the spices smell toasted but are not dark.
- 4
Add the chickpeas, potatoes and water. Cook over medium heat, stirring gently, until hot and lightly coated with spiced liquid, 4-5 minutes; do not mash the chickpeas.
- 5
Turn off the heat and stir in the tamarind chutney, green chutney and lemon juice. Taste and adjust the salt or lemon while the mixture is warm and saucy.
- 6
Spoon the chana mixture into a shallow serving plate. Scatter the tomato, red onion, green chili and cilantro over the top.
- 7
Finish with chaat masala and Kashmiri chili powder, if using. Add the fried onions or sev immediately before serving so they remain crisp.
Tips for the Best Chana Chaat
- Use chickpeas that hold their shape; drain and rinse canned chickpeas thoroughly so the chaat does not taste metallic or watery.
- For firmer potatoes, stop cooking as soon as a knife enters with slight resistance; they will soften further in the hot chickpea mixture.
- Tamarind and green chutney vary in strength. Add them gradually and adjust with lemon juice, salt or a pinch of sugar if the chutney is especially sharp.
- Use sev for the traditional chaat crunch, or use crisp fried onions when sev is unavailable. Add either only at the table.
- The chickpea and potato mixture can be made up to 1 day ahead and refrigerated. Bring it to room temperature or warm gently before adding the fresh toppings and crunch.
Storage and Reheating
Refrigerate the chickpea-potato mixture in an airtight container for up to 3 days. Store fresh toppings and sev separately, then reheat the mixture gently in a skillet or microwave before assembling. The fully assembled chaat is best eaten immediately and does not freeze well.
