Jump to RecipeBhindi masala is a dry Pakistani and North Indian okra dish made with sliced okra, browned onions, tomatoes and warm ground spices. This version follows the Pakistani-style approach: the okra is fried until the sticky texture mostly disappears, then finished with the masala rather than simmered in a wet sauce.
Serve it in a wide dish with warm chapati, lemon wedges and fresh green chili, as shown. Keep the pan uncovered and avoid stirring too often; trapped steam makes okra slimy, while high, dry heat keeps the pieces distinct and lightly crisp.
Ingredients
- 1 1/2 lb (680 g) fresh okra, rinsed and thoroughly dried
- 1/2 cup (120 ml) neutral oil, divided
- 1 large yellow onion (225 g), thinly sliced
- 2 medium tomatoes (300 g), roughly chopped
- 2 green chilies (15 g), slit lengthwise
- 1 tbsp (15 ml) grated fresh ginger
- 4 garlic cloves (15 g), finely chopped
- 1 tsp (3 g) ground cumin
- 1 tsp (2 g) ground coriander
- 1/2 tsp (1 g) ground turmeric
- 1 tsp (2 g) Kashmiri chili powder (or mild paprika)
- 1/2 tsp (1 g) cayenne pepper
- 1 tsp (5 g) fine salt, plus more to taste
- 1/2 tsp (1 g) amchur (dried mango powder)
- 1/2 tsp (1 g) garam masala
- 1/4 cup (15 g) chopped fresh cilantro, plus more to garnish
- 8 chapatis (about 8 oz/225 g total), for serving
- 1 lemon (140 g), cut into wedges, for serving
Instructions
- 1
Trim the okra tops and tips, then slice it into 1/2-inch (1.25 cm) rounds. Spread it on a towel and let it air-dry for 10 minutes; any surface moisture increases the slime.
- 2
Heat 1/4 cup (60 ml) of the oil in a wide skillet over medium-high heat. Add the okra in a single layer, working in batches if needed, and fry uncovered for 8-10 minutes, stirring only occasionally, until the pieces are bright green with browned edges and no longer very sticky. Transfer to a plate.
- 3
Add the remaining 1/4 cup (60 ml) oil to the skillet over medium heat. Add the sliced onion and cook for 8-10 minutes, stirring frequently, until deeply golden at the edges but not burnt.
- 4
Add the ginger, garlic and green chilies. Cook over medium heat for 1 minute, until fragrant, then add the cumin, coriander, turmeric, Kashmiri chili powder, cayenne and salt. Stir for 30 seconds so the spices bloom in the oil.
- 5
Add the tomatoes and cook uncovered over medium-high heat for 6-8 minutes, stirring and crushing them with the spoon, until soft and the oil separates around the masala.
- 6
Return the fried okra to the skillet and fold gently through the masala. Cook uncovered over medium-low heat for 3-4 minutes, just until hot and coated while the okra remains distinct.
- 7
Turn off the heat and fold in the amchur, garam masala and cilantro. Taste and adjust the salt, then rest for 2 minutes before serving.
- 8
Warm the chapatis in a dry skillet over medium heat for 20-30 seconds per side, until pliable with a few toasted spots. Serve the bhindi masala with the chapatis, lemon wedges and extra cilantro.
Tips for the Best Bhindi Masala
- Dry the okra thoroughly before cutting and cooking. If it is wet, pat it dry with paper towels and fry in batches.
- Use the widest skillet available so moisture can evaporate. Do not cover the pan after adding the okra.
- If using frozen okra, thaw it completely, pat it very dry and expect a slightly softer result; do not boil it first.
- For less heat, omit the cayenne and use one mild green chili. For more heat, leave the chili seeds in.
- The onion should be deeply golden for a rich color, but remove it from the heat if it starts turning black.
- Make the masala and fry the okra separately up to 4 hours ahead. Reheat the masala, fold in the okra, and finish just before serving for the best texture.
Storage and Reheating
Refrigerate cooled bhindi masala in an airtight container for up to 3 days; store chapatis separately for up to 2 days. Freeze the bhindi for up to 1 month, although the okra will soften. Reheat uncovered in a skillet over medium heat until hot, adding a splash of oil if needed; warm chapatis briefly in a dry skillet.
Frequently Asked Questions
How do you keep bhindi masala from getting slimy?
Wash the okra ahead of time and dry it completely before slicing. Fry it uncovered in hot oil, avoid overcrowding the pan, and do not add water.
Can I make bhindi masala without frying the okra?
Yes, you can sauté it in less oil, but frying gives the dish its drier texture and helps reduce the okra's stickiness. Cook it in batches if necessary.
What do you serve with Pakistani bhindi masala?
Serve it with chapati, roti or naan, plus lemon wedges and sliced onion. Plain yogurt or a simple cucumber raita also works well.
Can bhindi masala be made ahead?
The onion-tomato masala and fried okra can be prepared separately several hours ahead. Combine and reheat uncovered just before serving so the okra does not become too soft.
