
Beef Bourguignon
Beef Bourguignon is a classic French dish that features tender beef stewed in a rich red wine sauce, complemented by aromatic vegetables and herbs. This hearty meal is perfect for a cozy dinner and is sure to impress your guests with its deep flavors and comforting essence.
Ingredients
- 2 pounds beef chuck, cut into 1-inch cubes
- 4 cups red wine (preferably Burgundy)
- 2 cups beef broth
- 3 tablespoons olive oil
- 1 large onion, chopped
- 2 carrots, sliced
- 2 cloves garlic, minced
- 1 tablespoon tomato paste
- 1 bouquet garni (thyme, bay leaf, parsley)
- 8 ounces mushrooms, quartered
- 4 ounces pancetta or bacon, diced
- Salt and pepper to taste
- Fresh parsley for garnish

In a large bowl, marinate the beef cubes in red wine for at least 2 hours, preferably overnight.

Remove the beef from the marinade and pat dry. Reserve the marinade.

In a large Dutch oven, heat olive oil over medium-high heat. Add the pancetta and cook until crispy. Remove and set aside.

In the same pot, brown the beef in batches until all sides are seared. Remove and set aside.

Add onions and carrots to the pot and sauté until softened, about 5 minutes. Stir in garlic and tomato paste, cooking for another minute.

Return the beef and pancetta to the pot. Pour in the reserved marinade and beef broth, and add the bouquet garni. Bring to a simmer.

Cover and cook on low heat for about 2-3 hours, or until the beef is tender.

In the last 30 minutes of cooking, add the mushrooms.
