
Chicken Biryani
Chicken Biryani is a fragrant and flavorful rice dish layered with marinated chicken and aromatic spices. This beloved Indian dish is perfect for special occasions or a comforting family meal.
Ingredients
- 2 cups basmati rice
- 500 grams chicken, cut into pieces
- 1 large onion, thinly sliced
- 2 tomatoes, chopped
- 1/2 cup yogurt
- 3 tablespoons ginger-garlic paste
- 2-3 green chilies, slit
- 1/4 cup chopped mint leaves
- 1/4 cup chopped coriander leaves
- 1 teaspoon cumin seeds
- 1 teaspoon garam masala
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 4-5 cups water
- 4 tablespoons oil or ghee
- Salt to taste
- Whole spices (2-3 bay leaves, 4-5 cloves, 4-5 green cardamom pods, 1 stick cinnamon)

Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.

In a large bowl, marinate the chicken with yogurt, ginger-garlic paste, turmeric powder, red chili powder, and salt. Let it sit for at least 30 minutes.

Heat oil or ghee in a heavy-bottomed pot. Add the whole spices and sauté until fragrant, then add sliced onions and cook until golden brown.

Add the marinated chicken and cook until it is browned and cooked through, about 10-15 minutes.

Stir in chopped tomatoes, green chilies, mint, coriander leaves, and garam masala. Cook for another 5 minutes.

In a separate pot, bring water to a boil and add the soaked rice. Cook the rice until it is 70% done, then drain the water.

Layer the partially cooked rice over the chicken mixture in the pot. Spread it evenly and sprinkle additional mint and coriander on top.

Cover the pot with a tight-fitting lid and cook on low heat for 25-30 minutes to allow the flavors to meld and the rice to finish cooking (this is called 'dum').

Once done, gently fluff the biryani with a fork and serve hot with raita or salad.
