  • 4 large whole wheat tortillas
  • 1 zucchini, sliced
  • 1 bell pepper, sliced
  • 1 red onion, sliced
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup hummus
  • 1 cup spinach leaves

Instructions

    Preheat a grill or grill pan over medium-high heat.

    In a bowl, toss the zucchini, bell pepper, red onion, and cherry tomatoes with olive oil, garlic powder, paprika, salt, and pepper.
