
Vietnamese Spring Rolls
Vietnamese Spring Rolls are fresh, light, and bursting with flavor, perfect for a healthy snack or appetizer. Wrapped in delicate rice paper, these rolls are filled with vibrant vegetables, herbs, and protein of your choice, served with a zesty dipping sauce.
Ingredients
- 8 rice paper wrappers
- 1 cup cooked shrimp, sliced
- 1 cup vermicelli noodles, cooked
- 1 cup lettuce leaves, shredded
- 1 cup carrots, julienned
- 1 cup cucumber, julienned
- 1/2 cup fresh mint leaves
- 1/2 cup fresh basil leaves
- 1/2 cup cilantro leaves
- 1/4 cup hoisin sauce
- 1 tablespoon peanut butter (optional)
- 1 tablespoon lime juice

Prepare all the ingredients by slicing the shrimp, julienning the carrots and cucumber, and cooking the vermicelli noodles according to package instructions.

Fill a shallow dish with warm water and soak one rice paper wrapper for about 10-15 seconds until it softens.

Lay the softened rice paper on a clean surface and start layering with lettuce, vermicelli noodles, shrimp, carrots, cucumber, and herbs.

Fold the sides of the rice paper over the filling, then roll it tightly from the bottom to the top to form a spring roll.

Repeat the process with the remaining wrappers and filling ingredients.

To make the dipping sauce, mix hoisin sauce with peanut butter, lime juice, and a little water to thin it out if necessary.
