Ingredients
- 2 cups whole milk
- 1/2 cup granulated sugar
- 1/3 cup cornstarch
- 1/4 teaspoon salt
- 3 large egg yolks
- 2 tablespoons unsalted butter
- 1 teaspoon vanilla extract
- 4 ripe bananas, sliced
- 1 box vanilla wafers (about 12 ounces)
- 2 cups heavy whipping cream
- 2 tablespoons powdered sugar
Instructions
- 1
In a saucepan, whisk together the milk, granulated sugar, cornstarch, and salt over medium heat until smooth.
- 2
In a separate bowl, whisk the egg yolks together. Once the milk mixture begins to thicken, slowly pour about a cup of it into the egg yolks while whisking constantly to temper the eggs.
- 3
Return the egg mixture to the saucepan and continue to cook, whisking constantly, until the pudding thickens and bubbles.
- 4
Remove from heat and stir in the butter and vanilla extract. Let it cool slightly.
- 5
In a large serving dish, layer half of the vanilla wafers, half of the banana slices, and half of the pudding mixture.
- 6
Repeat the layers with the remaining vanilla wafers, bananas, and pudding.
- 7
In a separate bowl, whip the heavy cream with the powdered sugar until soft peaks form.
- 8
Spread the whipped cream over the top of the pudding and refrigerate for at least 2 hours before serving.
