Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 4 (8-ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • 1 tablespoon all-purpose flour
  • 1 tablespoon lemon juice

Instructions

  1. 1

Preheat your oven to 325°F (160°C).

  2. 2

In a mixing bowl, combine graham cracker crumbs, melted butter, and 1/4 cup sugar. Press the mixture into the bottom of a 9-inch springform pan to form the crust.

  3. 3

In a large bowl, beat the softened cream cheese until smooth. Gradually add 1 cup of sugar and vanilla extract, mixing until well combined.

  4. 4

Add eggs one at a time, mixing on low speed after each addition just until incorporated. Avoid overmixing.

  5. 5

Add the sour cream, flour, and lemon juice, mixing until smooth.

  6. 6

Pour the cream cheese mixture over the prepared crust in the springform pan.

  7. 7

Bake in the preheated oven for 60 minutes or until the center is set but slightly jiggly.

  8. 8

Turn off the oven and leave the cheesecake inside for 1 hour to cool slowly.

  9. 9

Remove from the oven and let it cool completely at room temperature, then refrigerate for at least 4 hours, preferably overnight.

  10. 10

Before serving, remove the sides of the springform pan and slice the cheesecake. Enjoy!
