Ingredients

  • 1/2 cup basmati rice
  • 4 cups full-fat milk
  • 1/2 cup sugar
  • 1/4 cup chopped pistachios
  • 1/4 cup chopped almonds
  • 1/4 teaspoon saffron strands soaked in 2 tablespoons warm milk
  • 1/2 teaspoon cardamom powder
  • 2 tablespoons rose water
  • 2 tablespoons dried rose petals for garnish
  • A pinch of salt

Instructions

  1. 1

Wash the basmati rice thoroughly and soak it in water for 30 minutes.

  2. 2

In a heavy-bottomed pan, bring the milk to a boil and then reduce to a simmer.

  3. 3

Add the soaked rice to the simmering milk and cook on low heat, stirring occasionally to prevent sticking.

  4. 4

Once the rice is cooked and the mixture thickens (about 30-35 minutes), add the sugar, saffron milk, cardamom powder, and a pinch of salt.

  5. 5

Continue to cook for another 5-10 minutes until the sugar is dissolved and the kheer reaches your desired consistency.

  6. 6

Stir in the rose water and remove from heat.

  7. 7

Let the kheer cool slightly before serving. Garnish with chopped pistachios, almonds, and dried rose petals.

  8. 8

Serve warm or chilled as desired.
