Ingredients

  • 2 cups cooked white rice
  • 1 cup spinach, blanched
  • 1 cup carrots, julienned
  • 1 cup zucchini, julienned
  • 1 cup shiitake mushrooms, sliced
  • 200 grams ground beef (or tofu for a vegan option)
  • 2 eggs
  • 2 tablespoons gochujang (Korean chili paste)
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • 1 teaspoon sugar
  • Sesame seeds for garnish
  • Green onions, chopped for garnish

Instructions

    In a bowl, mix the ground beef (or tofu) with soy sauce, sesame oil, and sugar. Let it marinate for 15 minutes.

    Heat vegetable oil in a pan over medium heat. Add the marinated beef (or tofu) and sauté until cooked through. Set aside.

    In the same pan, sauté the carrots, zucchini, and shiitake mushrooms separately until tender. Add spinach and cook until wilted. Season vegetables with a pinch of salt.

    In another pan, fry the eggs sunny-side up until the whites are set and the yolks are still runny.

    To assemble, place a serving of cooked rice in a bowl. Arrange the sautéed vegetables and beef (or tofu) on top of the rice.
