
Sfiha Recipe – Authentic Lebanese Meat Pies
Sfiha, also known as Lebanese meat pies, are savory pastries filled with a spiced mixture of ground meat, tomatoes, and onions. These delicious pies are perfect for sharing and make a wonderful appetizer or snack.
Ingredients
- 2 cups all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon sugar
- 1/2 cup warm water
- 1/4 cup olive oil
- 1 teaspoon active dry yeast
- 250 grams ground beef or lamb
- 1 small onion, finely chopped
- 1 medium tomato, finely chopped
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon allspice
- 1/2 teaspoon cumin
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)

In a bowl, combine the flour, salt, and sugar. Mix well and create a well in the center.

In a separate bowl, mix warm water with yeast and let it sit for 5 minutes until frothy.

Add the olive oil to the flour mixture and gradually incorporate the yeast mixture, kneading until a smooth dough forms. Cover and let rise for 1 hour.

Meanwhile, in a skillet, sauté the chopped onion in a little olive oil until translucent.

Add the ground meat to the skillet and cook until browned. Stir in the chopped tomato, cinnamon, allspice, cumin, salt, and pepper. Cook for an additional 5 minutes and set aside to cool.

Preheat the oven to 400°F (200°C).

Once the dough has risen, divide it into small balls. Roll each ball into a circle about 1/4 inch thick.

Place a spoonful of the meat mixture in the center of each circle, then fold the edges over to create a triangular shape, pinching to seal.

Place the sfiha on a baking sheet lined with parchment paper and bake for 20-25 minutes until golden brown.
