
Traditional Middle Eastern Freekeh
Freekeh is a wholesome and nutty grain made from green durum wheat that is harvested early and roasted, giving it a unique flavor. This dish is often served as a hearty side or base for various toppings, making it a versatile addition to any meal.
Ingredients
- 1 cup freekeh
- 2 cups vegetable broth
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- Salt to taste
- Pepper to taste
- 1/4 cup fresh parsley, chopped
- 1/4 cup almonds, toasted and chopped (optional)
