Ingredients
- 8 oz rice noodles
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 egg, beaten
- 1 cup bean sprouts
- 1/2 cup green onions, chopped
- 1/4 cup roasted peanuts, crushed
- 3 tablespoons fish sauce
- 1 tablespoon tamarind paste
- 1 tablespoon sugar
- 1 tablespoon lime juice
- Lime wedges for serving
- Fresh cilantro for garnish

Soak the rice noodles in hot water for about 10 minutes or until soft, then drain and set aside.

In a large pan or wok, heat the vegetable oil over medium-high heat. Add the minced garlic and stir-fry for about 30 seconds.
