  • 400g shrimp, peeled and deveined
  • 4 cups chicken or seafood broth
  • 2 stalks lemongrass, cut into 2-inch pieces and smashed
  • 5-6 kaffir lime leaves, torn
  • 3-4 slices galangal (or ginger if unavailable)
  • 3-4 Thai bird's eye chilies, smashed
  • 200g mushrooms, sliced
  • 1 medium tomato, cut into wedges
  • 1 small onion, sliced
  • 2 tablespoons fish sauce
  • 1 tablespoon lime juice
  • 1 teaspoon sugar
  • Fresh cilantro leaves for garnish
  • Chili paste (Nam Prik Pao) for flavor (optional)

Instructions

    In a pot, bring the broth to a boil over medium heat.

    Add the lemongrass, kaffir lime leaves, galangal, and bird's eye chilies to the pot. Let it simmer for about 5 minutes to infuse the flavors.

    Add the sliced onion and mushrooms to the pot and cook for another 3 minutes.

    Stir in the shrimp and tomato, cooking until the shrimp turns pink, about 3-5 minutes.
